The Location
I knew ADLER Spa Resort Sicilia was going to be special before I had even stepped through the doors. The drive winds through sleepy Sicilian villages and endless olive groves before, almost without warning, the landscape gives way to one of the most spectacular coastlines I have seen anywhere in Italy. Chalk white cliffs tumble into impossibly clear water, the Mediterranean stretches endlessly towards the horizon and, tucked almost invisibly into the hillside, ADLER Sicilia seems to emerge from the landscape rather than sit upon it.
The Mediterranean is the constant throughout ADLER Sicilia. It follows you everywhere. From breakfast on the terrace to lazy afternoons beside the pools, from yoga at sunrise to treatments in the spa, the sea never disappears from view. Every path seems to lead back towards it, every window frames it and every terrace encourages you to stop for just a little longer than you intended.
The Accommodation
I loved how understated everything felt. There is no grand entrance, no ostentatious lobby or over designed interiors competing for attention. Instead, the contemporary architecture melts into the cliffs beneath grassy roofs planted with native vegetation. Lavender, rosemary, wild thyme and citrus trees perfume the air, while ancient olive trees anchor the gardens. It is luxurious, certainly, but in a quiet, confident way that allows the setting to do the talking.
My suite reflected the same philosophy. It was spacious, beautifully designed and incredibly comfortable, but what I remember most isn't the room itself. It was waking each morning, pulling back the curtains and seeing nothing but sea. I found myself lingering on my terrace with a coffee far longer than I normally would, watching the colours shift from soft morning blues to the deep sapphire of midday.
The Pools
The pools deserve their own mention because each offers a completely different experience. The main indoor outdoor pool is large enough to spend hours in, while the lap pool is ideal if you actually want to swim rather than simply float. But it was the thermal pool perched on the cliff edge that kept drawing me back. Sitting in warm water while looking across one of Sicily's last untouched stretches of coastline felt wonderfully restorative, particularly as the afternoon light began to soften.
The Food
Breakfast quickly became one of my favourite parts of the day. There is something wonderfully indulgent about starting the morning with warm brioche and almond granita while looking out across the Mediterranean. Alongside Sicilian pastries, fresh fruit, local cheeses and homemade cakes, everything felt rooted in the island's culinary traditions. The same philosophy continued into lunch and dinner, where organic local ingredients and excellent Sicilian wines celebrated the region without ever feeling overly complicated.
The Spa
Although the food is excellent, the spa is undoubtedly the heart of the resort. Even reaching it feels like part of the experience. The path winds gently through the gardens, the sea remaining firmly in view until you arrive at an oasis of soft woods, natural stone and calming scents inspired by Sicily's citrus groves. I remember walking in after a morning by the pool and instantly feeling my shoulders drop.
The spa itself is beautiful without feeling intimidating. Floor to ceiling windows blur the line between inside and outside, while gentle water features, comfortable relaxation spaces and natural materials create an atmosphere that encourages you to slow down. I spent as much time reading on one of the sofas overlooking the sea as I did moving between treatments.
One of my favourite design details was the ancient olive tree around which the spa seems to unfold. Guests descend a sweeping staircase wrapped around its gnarled trunk before arriving at fifteen treatment rooms, each dedicated to a different ritual. My massage was exceptional, but what stayed with me afterwards was lying in the relaxation room listening to the distant waves while watching the sea sparkle through the windows.
Outside, two panoramic saunas overlook the coastline, each infused with Sicilian herbs and citrus aromas. They are adults only, wonderfully peaceful and the perfect way to end an afternoon after swimming in the crystal clear waters below. The beach itself, reached by buggy, remains blissfully wild. There are no rows of sunbeds or beach clubs here, just nature exactly as it should be.
The Activities
What surprised me most about ADLER Sicilia, however, was just how much there is to do. Most of the activities are included in your stay, and rather than feeling like an afterthought, they are genuinely well organised. One morning I joined a yoga class overlooking the pool. There were only four of us, which meant the session felt incredibly personal, with our instructor adapting the practice to suit everyone's ability. It was the perfect start to the day. The experience that really stayed with me, though, was the guided e bike tour through the Torre Salsa Nature Reserve. I wasn't entirely sure what to expect, but it ended up being one of the highlights of my stay. Cycling through olive groves, pine forests and tiny villages before reaching spectacular viewpoints over the protected coastline gave me a completely different perspective on this corner of Sicily. Our guide shared stories about local plants, wildlife and the area's history, making it feel far more immersive than simply joining another hotel excursion.
There are countless other activities too, from Pilates, functional training and breathing workshops to cooking classes, wine tastings and guided visits to the Valley of the Temples. Even the traditional Aufguss sauna rituals became something I looked forward to, despite never having tried one before.
I also appreciated the small practical touches. The QR code on the room key gave me instant access to the daily programme, restaurant opening times, maps and weather forecasts without needing to call reception. It is a simple idea, but one that made planning each day incredibly easy.
Families
Although families are very welcome, thanks to an excellent children's club filled with nature based activities, the minimum age policy helps preserve the peaceful atmosphere that makes ADLER Sicilia so special.
The Verdict: Is It Worth It?
Without question.
There are many luxury hotels in Sicily, but very few achieve what ADLER Spa Resort Sicilia does so effortlessly. It is not simply a beautiful spa hotel with excellent food and spectacular sea views. It is a place that genuinely slows you down.
I came expecting a luxury wellness retreat. I left feeling as though I had discovered one of Sicily's best kept secrets.
Long after leaving, it isn't one particular massage, meal or swimming pool that I remember most vividly. It is standing on those cliffs at sunset, breathing in the scent of wild herbs carried on the sea breeze, listening to the waves below and realising I hadn't looked at my phone for hours.
For me, that is the greatest luxury of all.
