First Impressions: Arriving at Adler Spa Resort Sicilia

I knew Adler Spa Resort Sicilia was going to be special before I had even stepped through the doors. The drive winds through sleepy Sicilian villages, vineyards and endless olive groves before, almost without warning, the landscape gives way to one of the most spectacular coastlines I have seen anywhere in Italy. Chalk white cliffs tumble into the impossibly blue Mediterranean, the sea stretches endlessly towards the horizon and, tucked almost invisibly into the hillside, Adler seems to emerge from the landscape rather than sit upon it.

The first thing I noticed wasn't the architecture or even the spa. It was the silence. Apart from the sound of waves breaking against the cliffs below and birdsong drifting across the gardens, there was very little else. Within minutes of arriving, I found myself doing something I rarely do at a hotel. Instead of reaching for my camera or exploring every corner, I simply stood looking out at the sea.

That feeling stayed with me for my entire stay.

The Mediterranean is the constant throughout Adler Sicilia. It follows you everywhere. From breakfast on the terrace to lazy afternoons beside the pools, from yoga at sunrise to treatments in the spa, the sea never disappears from view. Every pathway seems to lead towards it, every floor-to-ceiling window frames it and every terrace encourages you to stop for just a little longer than you intended.

I loved how understated everything felt. There is no grand entrance or ostentatious lobby. Instead, the resort consists of beautifully designed single-storey buildings that blend almost seamlessly into the surrounding landscape. Flat roofs are planted with grasses and native vegetation, while natural Sicilian stone, clay, cedar wood and glass reflect the colours of the coastline. Water channels flow between the indoor and outdoor spaces, reinforcing the feeling that nature has been invited inside.

The architecture is quietly luxurious, allowing the landscape to remain the star of the show.

Junior Suites

Adler Spa Resort Sicilia has just 90 suites, giving the resort a wonderfully intimate atmosphere. My Junior Suite measured an incredibly generous 55 square metres and felt more like a private apartment than a hotel room. Floor-to-ceiling windows flooded the room with natural light and opened onto a panoramic terrace overlooking the Mediterranean. The interiors were calm and elegant, decorated in earthy shades of taupe, terracotta and warm neutrals with sustainable cedar wood furnishings and every modern comfort, including digital television and complimentary WiFi.

Family Suites

Family Suites extend to an impressive 75 square metres, making them an excellent choice for those travelling with children while still maintaining the resort's sophisticated atmosphere.

What I remember most, however, wasn't the room itself. It was waking each morning, making a coffee and sitting outside watching the changing colours of the Mediterranean as the first rays of sunlight illuminated the cliffs below.

The Pools

The pools deserve a section of their own, because each offers a completely different experience.

The main indoor-outdoor pool became somewhere I returned to several times a day, whether for an early morning swim or a relaxing soak before dinner. The dedicated lap pool is perfect for guests looking to exercise.

Rooftop Thermal Pool

The spectacular rooftop thermal pool quickly became my favourite spot in the resort. Suspended above the coastline, it offers uninterrupted views across the Mediterranean and Torre Salsa Nature Reserve, making it almost impossible to leave.

Floating there as the sea sparkled below was one of those moments that perfectly sums up why people travel to Sicily.

The Spa: 3,200 Square Metres of Wellness on the Sicilian Coast

Although the views are unforgettable, the heart of Adler Sicilia is undoubtedly its extraordinary 3,200 square metre spa.

Even reaching it feels like part of the experience. The path winds gently through fragrant gardens filled with rosemary, wild thyme, lavender, citrus trees and ancient olive trees, the Mediterranean remaining firmly in view until you reach the entrance.

Inside, everything immediately encourages you to slow down. Soft wood, natural stone, calming fragrances inspired by Sicily and gentle music create an atmosphere that feels restorative from the moment you arrive. Floor-to-ceiling windows blur the boundaries between inside and outside, while comfortable lounges overlook the sea, making it just as tempting to spend an hour reading in your robe as it is moving between treatments.

One of my favourite design features was the magnificent ancient olive tree around which the spa unfolds. Descending the staircase wrapped around its twisted trunk feels almost ceremonial before arriving at fifteen treatment rooms named after figures from mythology.

Treatments and Therapies

The treatment menu is extensive. Alongside exceptional massages and facials, there are hydrotherapy rooms, manicure and pedicure suites, a dedicated couples treatment room, beauty services and a traditional Thai massage room, which proved to be one of the highlights of my stay.

Sea-facing treatment rooms allow the salty sea air to drift inside, while the distant sound of waves creates an incredibly calming backdrop during treatments.

Thermal Experiences and the Aufguss Ritual

The thermal experiences are equally impressive. There is a panoramic Finnish sauna, a gentler Bio Sauna, a steam bath and outdoor relaxation areas overlooking the sea. Sicily is celebrated here through subtle details, with citrus fruits and aromatic herbs scenting the sauna rituals.

I also loved experiencing the traditional Aufguss ritual, a German-inspired sauna ceremony led by an experienced sauna master. Lasting around fifteen minutes, the combination of aromatic oils, carefully choreographed towel movements and heat circulation creates an unexpectedly immersive wellness experience.

Dining: Sicilian Cuisine at Its Finest

Food is another area where Adler Sicilia quietly excels.

Breakfast on the Terrace

Breakfast quickly became my favourite meal of the day. There is something wonderfully indulgent about beginning the morning with warm brioche, almond granita, fresh Sicilian pastries, seasonal fruit, homemade cakes, local cheeses and freshly squeezed juices while overlooking the Mediterranean.

The Seaview Restaurant and Osteria

Much of the produce served throughout the resort is grown within Adler's own gardens, where more than twenty-five varieties of vegetables, herbs and fruit flourish. Fresh seafood arrives daily from local markets, while island-reared meats, Sicilian olive oils and regional wines showcase the very best of southern Sicily.

Dinner is served in the elegant glass-fronted Seaview Restaurant, where refined Sicilian cuisine is accompanied by spectacular sea views, while the more relaxed Osteria offers homemade pasta, pizzas, salads and lighter lunches enjoyed outdoors beneath the Sicilian sunshine.

Activities and the Wellness Programme

One thing that genuinely surprised me was just how much is included in the room rate.

Every day offers an impressive programme of complimentary activities, all led by passionate instructors and local experts.

I joined an early morning yoga class overlooking the pool and the Mediterranean. With only four participants, the class felt incredibly personal and our instructor adapted the practice to suit everyone's experience level. It was the perfect way to begin the day.

The Guided E-Bike Tour Through Torre Salsa Nature Reserve

The guided e-bike tour through Torre Salsa Nature Reserve became the standout experience of my stay.

Cycling through olive groves, pine forests, tiny villages and protected coastal trails, our guide shared fascinating insights into Sicily's medicinal plants, local wildlife and history. Eventually we reached one of the reserve's panoramic viewpoints overlooking chalk cliffs and brilliantly turquoise water. It was one of those views that simply stops you in your tracks.

Other complimentary activities include Pilates, functional training, HIIT, aquagym, breathing workshops, guided hikes, cooking classes, wine tastings and excursions to the Valley of the Temples, making it one of the most comprehensive wellness programmes I have encountered at any luxury hotel.

Torre Salsa Nature Reserve: Sicily's Protected Wilderness

One of Adler Sicilia's greatest luxuries is undoubtedly its location beside Torre Salsa Nature Reserve.

Managed by WWF, this extraordinary protected landscape covers around 760 hectares of untouched coastline, fragrant Mediterranean vegetation and some of Sicily's clearest waters.

The hotel offers buggy transfers to its wild sandy beach, although the walk itself through the dunes is equally beautiful. Unlike many beach resorts, there are no rows of sunbeds, loud music or commercial beach clubs here. Just nature.

Guests can also arrange kayaking, paddle boarding, canoeing, horse riding along the beach and guided nature walks, making it an exceptional destination for those wanting to combine luxury with outdoor adventure.

Sustainability at Adler Spa Resort Sicilia

Luxury and sustainability coexist beautifully at Adler Sicilia.

The resort has clearly been designed to respect its extraordinary surroundings. Buildings were constructed using locally sourced Sicilian clay, natural stone and volcanic rock from the foothills of Mount Etna, while sustainable cedar wood has been used extensively throughout.

Grass-covered roofs allow the buildings to disappear into the landscape, rainwater and wastewater are recycled to irrigate the gardens, energy-efficient heat recovery systems reduce carbon emissions and electric beach shuttles transport guests to the shoreline. Even the underground car park provides charging stations for electric vehicles.

These initiatives never feel performative. Instead, they quietly reinforce Adler's commitment to protecting the landscape that makes this part of Sicily so special.

Exploring Southern Sicily: Day Trips from Adler Sicilia

Although I could easily have spent my entire stay within the resort, Adler Sicilia also makes an excellent base for exploring southern Sicily.

The magnificent Valley of the Temples in Agrigento is just thirty minutes away and remains one of Italy's most extraordinary archaeological sites. Nearby Scala dei Turchi, with its famous white limestone cliffs, is another must-visit, while charming fishing villages and family-run wineries are all within easy reach.

Is Adler Spa Resort Sicilia Worth It?

Without question.

There are many luxury hotels in Sicily, but very few achieve what Adler Sicilia does so effortlessly. It is not simply a beautiful spa hotel with excellent food and spectacular sea views. It is a place that genuinely slows you down.

I came expecting a luxury wellness retreat. I left feeling as though I had discovered one of Sicily's best kept secrets.

Long after leaving, it isn't one particular massage, meal or swimming pool that I remember most vividly. It is standing on those cliffs at sunset, breathing in the scent of wild herbs carried on the sea breeze, listening to the waves below and realising I hadn't looked at my phone for hours.

For me, that is the greatest luxury of all.
